Ingredients:

- 2 1/4 cups all-purpose flour

- 1/2 cup cold milk

- 1/4 cup cold water

- 1 egg, beaten (for egg wash)


Instructions:

1. In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well.

2. Cut the cold butter into small cubes and add them to the flour mixture. Using your hands or a pastry cutter, work the butter into the flour until you have coarse crumbs.

3. Make a well in the center of the mixture and pour in the cold milk and water. Stir until the dough starts to come together.

4. Turn the dough out onto a lightly floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Shape the dough into a ball.

5. Place the dough back in the mixing bowl and cover it with plastic wrap. Let it rise in a warm place for about 1 hour or until it doubles in size.

6. Once the dough has risen, punch it down to release the air. Turn it out onto a lightly floured surface and roll it into a rectangle, about 1/4 inch thick.

7. Fold the rectangle into thirds, like a letter. Turn the dough 90 degrees and roll it out again into a rectangle. Fold it into thirds again.

8. Repeat the rolling and folding process one more time. This helps create the layers in the croissants.

9. After the final fold, cover the dough with plastic wrap and refrigerate it for at least 1 hour or overnight.

10. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

11. Take the chilled dough out of the refrigerator and roll it into a large rectangle, about 1/4 inch thick. Cut the rectangle into triangles, with each base being about 3-4 inches wide.

12. Starting from the base of each triangle, roll them up tightly towards the pointed end, forming the croissant shape. Place the croissants on the prepared baking sheet, leaving some space between them.

13. Brush the croissants with the beaten egg to give them a nice golden color when baked.

14. Bake the croissants in the preheated oven for about 15-20 minutes, or until they turn golden brown.

15. Once baked, remove the croissants from the oven and let them cool on a wire rack before serving.
